  6. Place in the oven or grill for 5 minutes until the feta has soften, remove from the grill and scatter with chopped mint before serving

Put the corn, tomatoes, cheese and mint in a medium bowl. Drizzle with the olive oil and toss to coat. Season to taste with salt and pepper. Add the warm tomato mixture to a large bowl along with the feta, arugula, mint, balsamic vinegar, salt and pepper. Drain the orzo and add it to the bowl.
