  1. Get 1 large Continental Cucumber OR 2 Lebanese Cucumbers *about 300g

  3. Get 1 teaspoon Toban Djan (Chili Bean Sauce)
  4. Take 1 teaspoon Soy Sauce
  5. Take 1 teaspoon Sesame Oil

Place them in a glass mason jar or a bowl. In a medium pan, add the water, vinegar, sugar, salt, peppercorns, whole mustard seed, and red pepper flakes. Cut the cucumbers into approximately ½ inch rounds and place them in a mixing bowl. Sprinkle the cucumbers with the salt and gently mix.

Steps to make Spicy Cucumber:
  1. Cut Cucumber diagonally as you roll it on the board. This style of cut is called ‘Rangiri’ in Japanese. OR cut it as you like.
  2. Sprinkle Salt and massage, then set aside a few minutes.
  3. Add Toban Djan (Chili Bean Sauce), Soy Sauce and Sesame Oil, combine well, and serve immediately.

Cut the cucumbers into approximately ½ inch rounds and place them in a mixing bowl. Sprinkle the cucumbers with the salt and gently mix. Pour the salted cucumbers into a strainer and drain and rinse them with cold water. Cut the cucumber lengthwise in half and cut diagonally into thin slices. Put the cucumber into a large bowl.
