  1. Make ready 1 kg Potato (Big size New potato)
  2. Prepare 1 litre Veg oil to deep fry
  3. Get For seasoning
  4. Prepare to taste Black Rock salt
  5. Get 1 tsp Black pepper powder

They are commonly served as a snack, side dish, or appetizer. Drain, and rinse, then refill the bowl with water, and add the salt. Fresh, firm, and non-sprouted russet potatoes are the best for making chips. Soaking the sliced potato in ice water will remove a lot of the starch content, which results in a delicious crispy chip.

Steps to make Potato Chips:
  1. Thoroughly wash the potatoes and then peel. Keep the potatoes in room temperature water after peeling. Then slice the potatoes and keep it soaked in room temperature water for 2 hours or till all the slices stiffens up, after rinsing the slices in water once or twice. Once the slices stiffens up, drain the water out and leave it for half an hour to an hour to dry up the excess water.
  2. Heat enough oil to deep fry the potato slices. Once the oil heats up lower the flame and add in the potato slices in small batches…. fry for about 10 minutes or so or till you see the slices has reduced to 50% in size. Then put the flame on medium flame and fry till the slices turns crispy and becomes golden brown in colour. Be careful not to burn it. Once done keep it on a kitchen tissue paper to absorb the extra oil. Once cooled, sprinkle with black rock salt and black pepper powder. Enjoy!
