Then I heated up my pan threw in some veggie oil waited for it to get hot then plopped in the mix. in a mixing bowl stir together the flour, baking powder, salt and pepper. In another bowl, beat together the egg, milk,carrots, zucchini, and onions.

Spray a large skillet with cooking spray and warm over medium heat. Pour the batter by tablespoons into the pan, making a few pancakes at a time. Whisk the flour, baking powder, and salt together in a bowl and whisk to combine.

Steps to make Veggie Pancake:
  1. Chopped all the vegetables in small cubes or you can grated it.
  2. In a mixing bowl add vegetables, egg, salt, pepper, flour & milk. Mix all the ingredients properly.
  3. In a pan brush a little bit of oil on medium heat. Pour 2 tablespoon of batter in pan and cook for 5 minutes on each side until light golden brown in color. Repeat with remaining batter.
  4. Serve hot with some tomato ketchup & enjoy…. :) :)
