  1. First millet(foxtail) grind in a powder form.
  2. Boil the beetroot,remove the skin and grind make a fine smooth paste
  3. Take a bowl add millet powder, semolina,beetroot paste, curd and little water as needed and whisk them well. Make the consistency is thick and rest for 20 mins. This step is very important to get soft and fluffy idli.
  4. After 20 mins add salt,eno and lemon juice to the batter.(lemon juice will not make the idli sour. But is used to active the eno). Mix gently a few times.Quckly pour this to the idli molds do not let the batter rest after mixing eno.
  5. Grease the idli stand with oil and take a ladleful of batter and fill the idli mold. Add 11/2 cup of water in the idli steamer and let it boil. Put the idli stand inside and close the lid and steam for 18-20 mins
  6. Allow to cool down for 5-10 mins and then use a sharp knife to scoop the idlis out.
  7. Serve the millet beetroot idli with coconut chutney.

It is purely made with foxtail millet and urad dal. You can use a steamer or idli cooker to make idlis. Then grease the idli mold with oil and pour a ladle of fermented batter into the moulds. There is still a long way to go for me when it comes to eating healthy & eating a balanced diet. This just a very small step towards it.
