Steps to make Foxtail Millet Kheer Thinai Payasam:
  1. Wash and soak foxtail millet for 1 hrs and drain all the excess water by straining it.
  2. Take a heavy bottom pot add milk and keep it boil on medium flame.
  3. Heat a pan with 1 tbsp ghee roasted all nuts and keep it aside.
  4. Add millet into ghee and fry it on low flame. That gives a lovely aroma and nuty taste.(If you don't want to use ghee, just dry roast the millet on low flame for 2-3 minutes. Don't over roast it) and keep it aside.
  5. Once the milk comes to boil add millet to it. Turn the flame to low and let it cook till the millet cooks completely. This will take 15-20 minutes.
  6. Once the millet has cooked through completely add sugar and jaggery to it.and let it cook on low flame for further thickening. It would take take around 5-7 minutes. Do it on low flame otherwise it will curdle.
  7. Add roasted nuts to it and mix it nicely. Turn off the flame and kheer is ready to serve.
  8. Garnish the Foxtail millet kheer with some almonds cashews raisin and serve warm or chilled as desired.
